The Perfect Red Velvet Cake

Who doesn't love the perfect red velvet cake? This upgraded recipe starts with a simple box mix, but with a few easy additions, it transforms into a rich, moist, and deeply flavorful dessert that tastes anything but basic. Paired with a silky, homemade cream cheese frosting, each bite delivers the perfect balance of sweetness and piquancy. The result is a show-stopping treat that rivals—even beats—what you'd find at a fancy bakery. Whether you're baking for a celebration or just because, this red velvet cake is guaranteed to impress.

Cake Ingredients:

  • 1 Box - Betty Crocker Super Moist Red Velvet Cake Mix

  • 4 Eggs

  • 1 Cup of Milk ( I prefer to use Whole Milk)

  • 1 stick or ½ cup Melted Unsalted Butter

Frosting Ingredients:

  • 1 stick or ½ cup unsalted butter softened

  • 8 oz cream cheese softened (brick-style)

  • 1 teaspoon vanilla extract

  • ¼ teaspoon salt

  • 4 cups powdered sugar

Cake Instructions

Step 1: Preheat the oven to 350°F for aluminum or glass pans, or 325°F for nonstick pans. Prepare two 9-inch round cake pans by lining the bottoms with parchment paper and greasing the sides with butter for easy release and even baking.

Step 2: Mix Cake Mix, milk, butter, and eggs in large bowl with mixer on medium speed or beat vigorously by hand 2 minutes. Pour evenly into pans.

Step 3: Bake for 23-28 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes before removing from pans. Let cakes cool completely before icing.

Cream Cheese Frosting Instructions

Step 1: In the bowl of a stand mixer (or using a hand mixer), beat together the softened butter and cream cheese together until the mixture is smooth, creamy, and free of lumps. Then add vanilla extract and salt and stir well to combine.

Step 3: While having the mixer on a low setting, gradually add powdered sugar until completely combined.

Building the Cake

Step 1: Level out both of the cakes. I like to turn the scraps into crumbs to decorate the cake with.

Step 2: Place one cake layer on your serving plate or cake stand, and spread a generous, even layer of frosting over the top. Gently stack the second layer on top, then apply a thin, even coat of frosting over the entire cake to create a crumb coat. Refrigerate the cake for one hour to set the frosting before proceeding.

Step 3: After the crumb coat has set in the fridge for an hour, your next step is to apply the final layer of frosting. Smooth it evenly over the entire cake using an offset spatula or bench scraper for a clean, polished finish. Once frosted, you can decorate the cake as desired—with piping, sprinkles, cake crumbs, or other toppings—before serving or refrigerating until ready to serve.
